Chickpeas simmered in a deeply spiced onion-tomato masala; the vegan curry that needs no defending.
Quantities scaled from the original (4 servings).
Tick ingredients off as you gather them.
Fry the onions in the oil until deep gold, 12 minutes; add garlic, ginger and ground spices.
Add tomatoes; simmer 10 minutes until thick.
Add chickpeas and a splash of water; simmer 15 minutes, crushing some.
Finish with garam masala and lemon.
Serve on rice with coriander and yogurt.
