Method

  1. Step 1

    Toss the bread cubes in half the oil; bake at 200C fan for 8 minutes until crisp.

  2. Step 2

    Griddle the chicken in the remaining oil 5 to 6 minutes a side; rest and slice.

  3. Step 3

    Whisk yogurt, anchovies, garlic, mustard and lemon.

  4. Step 4

    Massage the kale with a spoonful of dressing, add cos, chicken and croutons, and finish with the rest of the dressing and Parmesan.
