Flattened chicken in a crisp oven-baked crumb under a pile of dressed rocket and Parmesan.
Quantities scaled from the original (2 servings).
Tick ingredients off as you gather them.
Dredge the chicken in flour, egg, then the Parmesan panko.
Oil-brush both sides; bake at 210C fan for 18 to 20 minutes, turning once, until golden.
Dress the rocket with extra virgin oil and half the lemon.
Pile rocket and shavings on the chicken; remaining lemon over. Potatoes alongside.
