Method

  1. Step 1

    Fry the mushrooms hard in the oil until browned; add garlic for 1 minute.

  2. Step 2

    Warm the stock; whisk in the miso off the boil.

  3. Step 3

    Add udon and pak choi to the broth for 3 minutes.

  4. Step 4

    Ladle into bowls, top with mushrooms, spring onions and soy; chilli oil if it's a cool day.
