Soft baked sweet potatoes split and filled with garlicky butter beans and wilted spinach, topped with lemony cottage cheese and toasted pumpkin seeds.

Heat the oven to 200°C fan. Prick the sweet potatoes, rub with 1 tsp of the oil and a little salt; bake on a tray 45 minutes until soft right through.
Toast the pumpkin seeds in a dry frying pan 2 minutes until they start to pop; tip out. Stir the lemon zest, half the chives and plenty of pepper into the cottage cheese.
In the same pan, warm the remaining oil and cook the garlic 1 minute. Add the butter beans and 3 tbsp water; crush a few with the back of a spoon and heat 3 minutes.
Add the spinach in handfuls, wilting each before the next, about 2 minutes. Season with the nutmeg, lemon juice, salt and pepper.
Split the potatoes, fluff the flesh with a fork and pile in the beans and spinach. Spoon over the cottage cheese and scatter with the seeds and remaining chives.
