A green take on shakshuka: spinach, leeks and herbs with soft spoonfuls of silken tofu.
Quantities scaled from the original (2 servings).
Tick ingredients off as you gather them.
Soften the leeks in the oil for 8 minutes; add garlic and cumin for 1 minute.
Wilt in the spinach with the herbs.
Nestle in spoonfuls of tofu; cover and warm through 4 minutes.
Season, scatter nutritional yeast, squeeze the lemon, and serve with sourdough.
