Method

  1. Step 1

    Brown the beef in the oil; remove. Fry the paste 2 minutes.

  2. Step 2

    Coconut milk, stock, fish sauce, tamarind and sugar in; return the beef.

  3. Step 3

    Cover; simmer very low 2 hours.

  4. Step 4

    Potatoes and onion in for the last 30, lid off to thicken.

  5. Step 5

    Peanuts and coriander; rice alongside.
