Method

  1. Step 1

    Roast the chickpeas in oil and paprika at 200C fan for 25 minutes until crunchy.

  2. Step 2

    Whisk yogurt, anchovy, garlic, mustard, lemon and grated Parmesan.

  3. Step 3

    Massage the kale with a spoon of dressing for a minute.

  4. Step 4

    Toss with the rest; top with chickpeas, shaved Parmesan, and eggs if using.
