Fragrant biryani where cauliflower rice replaces half the basmati; all the aroma, gentler curve.
Quantities scaled from the original (4 servings).
Tick ingredients off as you gather them.
Fry the onion in the oil until golden; 10 minutes. Remove half for the top.
Add chicken and curry paste; brown 5 minutes.
Stir in rice, whole spices and 300ml water; cover and simmer 12 minutes.
Fold in cauliflower rice and peas; cover off the heat for 8 minutes.
Serve with yogurt, the reserved onions, coriander and almonds.
