Method

  1. Step 1

    Mix the lamb with spices, onion and a good pinch of salt; shape into 12 koftas.

  2. Step 2

    Soak the bulgur in boiling water for 15 minutes; drain well.

  3. Step 3

    Toss the bulgur with parsley, mint, tomatoes, lemon and oil.

  4. Step 4

    Grill or griddle the koftas 10 to 12 minutes, turning.

  5. Step 5

    Serve over the tabbouleh with yogurt.
