Chicken breast in a flax-and-oat crust with baked wedges and a yogurt slaw.
Quantities scaled from the original (4 servings).
Tick ingredients off as you gather them.
Toss the wedges in half the oil; roast at 200C fan for 30 to 35 minutes.
Mix flax, oats and paprika. Dip the chicken in egg, then the crust; drizzle with remaining oil.
Bake alongside the wedges for 22 to 25 minutes until cooked through.
Stir the slaw: cabbage, carrot, yogurt, mustard, lemon.
Serve crusted chicken with wedges and slaw.
