Method

  1. Step 1

    Mix ricotta, Parmesan, yolk, zest, nutmeg and semolina; roll 14 balls on a semolina-dusted tray. Chill 20 minutes (or overnight).

  2. Step 2

    Simmer in salted water 3 to 4 minutes until they float and hold.

  3. Step 3

    Brown the butter with sage; wilt the spinach alongside.

  4. Step 4

    Toss gnudi in the butter; spinach, Parmesan, pepper.
