Method

  1. Step 1

    Brown the lamb in the oil; remove.

  2. Step 2

    Soften the onion; add garlic and spices for 1 minute.

  3. Step 3

    Return lamb with tomatoes and stock; simmer covered 60 minutes.

  4. Step 4

    Add apricots and chickpeas; simmer uncovered 25 minutes until rich.

  5. Step 5

    Soak the couscous; serve under the tagine with coriander and almonds.
