Method

  1. Step 1

    Brown the lamb hard in the oil; push aside.

  2. Step 2

    Add onions; soften 8 minutes, then garlic, ginger and paste.

  3. Step 3

    Add tomatoes and a splash of water; simmer 15 minutes.

  4. Step 4

    Peas in for the last 5. Stir mint into yogurt.

  5. Step 5

    Serve with chapatis, mint yogurt and coriander.
