Method

  1. Step 1

    Cook the onions in the oil with sugar and a pinch of salt, low and slow, 40 minutes to deep gold.

  2. Step 2

    Add garlic and thyme; deglaze with balsamic.

  3. Step 3

    Add stock; simmer 15 minutes. Whisk in miso off the boil.

  4. Step 4

    Top bowls with toasted sourdough and Gruyere; grill until molten.
