Method

  1. Step 1

    Fry the mushrooms dry in half the oil; remove.

  2. Step 2

    Soften onions and carrots in the rest; garlic, puree, Marmite and thyme in.

  3. Step 3

    Add lentils and stock; simmer 30 minutes. Fold in mushrooms.

  4. Step 4

    Mash the potatoes with extra virgin oil; top the filling.

  5. Step 5

    Bake at 200C fan for 25 minutes. Peas alongside.
