Method

  1. Step 1

    Pickle the onion in vinegar with a pinch of sugar.

  2. Step 2

    Dust the paneer with garam masala; griddle in half the oil until charred both sides.

  3. Step 3

    Wilt the spinach with garlic in the rest.

  4. Step 4

    Warm the flatbreads; load with spinach, paneer, yogurt, pickled onion and coriander.
