Pan-fried gnocchi, basil pesto, cannellini beans and golden tofu; comfort with a phytoestrogen spine.
Quantities scaled from the original (2 servings).
Tick ingredients off as you gather them.
Fry the tofu in half the oil until golden; remove.
Fry the gnocchi in the remaining oil 6 to 8 minutes until crisp and cooked.
Add beans and tomatoes for 2 minutes.
Off the heat, fold in pesto, spinach and tofu.
Serve with Parmesan and black pepper.
