Method

  1. Step 1

    Soften the onion; add garlic and spices for 1 minute.

  2. Step 2

    Add chickpeas and tomatoes; simmer 8 minutes.

  3. Step 3

    Wilt in the spinach; make wells and crack in the eggs.

  4. Step 4

    Cover and cook 5 to 6 minutes until just set.

  5. Step 5

    Serve with yogurt, coriander and warm pittas.
