Method

  1. Step 1

    Brown the beef in batches in the oil; remove.

  2. Step 2

    Soften the vegetables; stir in flour, then ale, stock, puree and bay. Return the beef.

  3. Step 3

    Cover and cook at 150C fan for 2.5 to 3 hours until collapsing.

  4. Step 4

    Rub flour and butter; add cheese, thyme and water for a soft dough. Twelve dumplings on top.

  5. Step 5

    Bake uncovered at 180C fan for 25 minutes until risen and golden.
