Lean venison with a hedgerow blackberry pan sauce, celeriac mash and kale.
Quantities scaled from the original (2 servings).
Tick ingredients off as you gather them.
Boil celeriac and potatoes 20 minutes; mash with half the butter.
Sear the oiled venison 2 to 3 minutes a side for medium-rare; rest 8 minutes.
Deglaze with stock, blackberries, balsamic and jelly; bubble to a glossy sauce with the rest of the butter.
Serve venison sliced on mash with kale and sauce.
