Sesame-sauced noodles under crispy pork mince and pak choi; numbing spice optional.

Tick ingredients off as you gather them.
Fry the pork hard in the oil until crisp; add garlic, ginger and soy.
Cook the noodles; blanch the pak choi alongside. Keep 4 tbsp water.
Whisk tahini, vinegar, honey and noodle water in the serving bowls.
Noodles into the sauce; pork and pak choi on top. Spice to taste.
