Gently poached salmon served fridge-cold with a creamy-light potato and cucumber salad.

Poach the salmon in barely simmering water with bay and peppercorns for 8 minutes; cool, then chill.
Boil the potatoes; cool and halve.
Whisk yogurt, mustard, dill and lemon; fold through potatoes and cucumber.
Plate the leaves, potato salad and flaked cold salmon.
