Method

  1. Step 1

    Scramble the eggs in half the oil until barely set; remove.

  2. Step 2

    Stir-fry garlic, ginger and carrot in the remaining oil for 2 minutes.

  3. Step 3

    Add rice and edamame, pressing into the pan; 3 to 4 minutes.

  4. Step 4

    Return the eggs with soy and sesame oil, toss, and top with spring onions.
