Method

  1. Step 1

    Render and roast the duck (or warm leftovers); rest and slice.

  2. Step 2

    Simmer stock with star anise, five-spice, ginger and garlic, 15 minutes; strain.

  3. Step 3

    Cook noodles and pak choi in the broth 4 minutes; season with soy.

  4. Step 4

    Bowl up; duck on top, spring onions, chilli oil if it's that kind of day.
