A tender banana loaf where flax replaces half the butter; toast slices for breakfast all week.
Quantities scaled from the original (10 servings).
Tick ingredients off as you gather them.
Heat the oven to 170C fan; line a 900g loaf tin.
Whisk bananas, eggs and oil.
Fold in flax, flour, sugar, baking powder, cinnamon, salt and most of the walnuts.
Scrape into the tin, top with remaining walnuts, and bake 50 to 55 minutes until a skewer comes out clean.
Cool before slicing; freezes in slices.
