Method

  1. Step 1

    Soften carrot, celery and onion in the olive oil for 6 minutes.

  2. Step 2

    Add lentils and stock; simmer 5 minutes.

  3. Step 3

    Roast the fish at 200C fan for 10 to 12 minutes.

  4. Step 4

    Stir parsley, zest and garlic with the extra virgin oil.

  5. Step 5

    Plate lentils, fish, then gremolata.
