Rice noodles, crispy tofu, egg and beansprouts in a tamarind sauce that skips the sugar overload.
Quantities scaled from the original (2 servings).
Tick ingredients off as you gather them.
Soak the noodles per the packet; drain.
Fry the tofu in the oil until golden all over; push aside and scramble the eggs in the pan.
Add noodles, tamarind, sauces and sugar; toss 2 minutes.
Add beansprouts and spring onions for 1 minute.
Serve with peanuts and lime.
