Method

  1. Step 1

    Cook the soba per the packet; rinse under cold water.

  2. Step 2

    Whisk soy, vinegar, sesame oil, ginger and honey.

  3. Step 3

    Sear the tuna in the oil over a fierce heat, 1 to 2 minutes a side; rest and slice.

  4. Step 4

    Wilt the spinach in the same pan.

  5. Step 5

    Toss noodles and spinach in the dressing, top with tuna and sesame.
