Cumin-roast squash over quick red lentil dal with yogurt and crispy onions.
Quantities scaled from the original (4 servings).
Tick ingredients off as you gather them.
Roast the squash in half the oil and the garam masala at 200C fan for 30 minutes.
Simmer lentils, turmeric and stock 20 minutes.
Sizzle garlic and cumin seeds in the remaining oil; pour over the dal.
Bowl dal, squash, yogurt, crispy onions and coriander; chapatis alongside.
