Method

  1. Step 1

    Soften the leeks in the butter; stir in flour, then milk gradually to a sauce. Add mustard and half the dill.

  2. Step 2

    Fold in all the seafood; tip into a big dish.

  3. Step 3

    Top with the lemon mash and cheddar.

  4. Step 4

    Bake at 200C fan for 30 to 35 minutes until bubbling. Peas alongside.
