Pork tenderloin roasted with apples, red onion and hispi cabbage in a mustard glaze.
Quantities scaled from the original (4 servings).
Tick ingredients off as you gather them.
Heat the oven to 200C fan. Mix mustard, honey and half the oil; rub over the pork.
Arrange cabbage, apples and onion in a tin, tossed in the remaining oil.
Sit the pork on top with the thyme and roast 25 to 30 minutes until cooked through.
Rest the pork 5 minutes, slice thickly and serve with the pan juices.
