Chicken thighs braised directly in sweet-sour Sicilian caponata; one pan, deep flavour.
Quantities scaled from the original (4 servings).

Brown the chicken in 1 tbsp oil; remove.
Fry the aubergine in the rest until golden; add onion, celery and garlic.
Tomatoes, vinegar, sugar, capers and olives in; return the chicken.
Simmer 30 minutes, lid half on.
Pine nuts and basil over; bread or couscous under.
