Method

  1. Step 1

    Melt half the butter in a frying pan over a medium heat. Soften the onion, garlic and thyme for 5 minutes, stirring.

  2. Step 2

    Turn the heat up. Add the livers and fry 4-5 minutes, turning once, until browned outside and just pink inside.

  3. Step 3

    Pour in the brandy and let it bubble for 1 minute. Take off the heat.

  4. Step 4

    Tip into a food processor with the remaining butter, orange zest, yogurt and nutmeg. Season well and blend until completely smooth.

  5. Step 5

    Spoon into 6 small pots or one dish, smooth the tops and chill 2 hours until set. Keeps 3 days in the fridge.

  6. Step 6

    Serve each pot with 2 oatcakes and a few apple slices for scooping.
