A korma built on live yogurt and ground almonds rather than cream, finished off the heat.
Quantities scaled from the original (4 servings).
Tick ingredients off as you gather them.
Cook the rice.
Brown the chicken in half the oil; remove.
Blitz and fry onion, garlic and ginger in the rest; add spices for 1 minute.
Return chicken with ground almonds and stock; simmer 15 minutes.
Off the heat, stir in the yogurt gradually.
Serve on rice with almonds and coriander.
