White fish steamed in paper with ginger, soy and spring onion; zero washing up, zero heaviness.

Tick ingredients off as you gather them.
Cook the rice; steam the pak choi over it for the last 4 minutes.
Lay each fillet on baking paper; top with ginger, soy, vinegar and half the spring onion.
Seal into parcels; bake at 200C fan for 12 minutes.
Open at the table; sesame oil, coriander and remaining spring onion over rice and greens.
