Nutty buckwheat crepes folded around wilted spinach, ham-optional, egg and cheese.
Quantities scaled from the original (4 servings).
Tick ingredients off as you gather them.
Whisk flour, 1 egg, milk and salt; rest 15 minutes.
Wilt the spinach with garlic; squeeze dry.
Fry thin galettes in a little butter.
For each: scatter cheese, spinach, and crack an egg in the centre; cover 3 minutes until just set and fold the edges in.
