Method

  1. Step 1

    Toss the carrots in harissa, oil and maple; roast at 200C fan for 30 minutes until blistered.

  2. Step 2

    Loosen the hummus with lemon and swipe over plates.

  3. Step 3

    Pile on the carrots with seeds and coriander.

  4. Step 4

    Serve with warmed flatbreads.
