White fish and prawns in a fennel-tomato broth with orange zest and a garlicky rouille toast.
Quantities scaled from the original (4 servings).
Tick ingredients off as you gather them.
Soften fennel and onion in the oil for 8 minutes; add garlic and saffron.
Add tomatoes, stock and zest; simmer 10 minutes.
Slip in fish for 4 minutes, prawns for 2 more, until just cooked.
Stir garlic into the mayonnaise; spread on toasts.
Serve the stew with rouille toasts and parsley.
