Method

  1. Step 1

    Wash and dry the seeds; toast in a dry pan with a pinch of salt until popping.

  2. Step 2

    Soften the onion in the oil; add garlic, ginger and spices.

  3. Step 3

    Add pumpkin, tomatoes, peanut butter and stock; simmer 30 minutes.

  4. Step 4

    Wilt in the spinach; finish with lime.

  5. Step 5

    Serve on rice, scattered with the seeds.
