A fridge-raid frittata of hot-smoked salmon, broccoli and dill; eat warm or take cold to work.
Quantities scaled from the original (4 servings).
Tick ingredients off as you gather them.
Heat the grill. Whisk eggs with yogurt, dill and pepper.
Soften spring onions in the oil in an ovenproof pan; add broccoli.
Pour in the eggs, scatter salmon and cheddar, and cook gently 8 minutes.
Grill 3 to 4 minutes until just set and golden.
Rest 5 minutes before slicing.
