Method

  1. Step 1

    Toss parsnips and onion in half the oil; roast at 200C fan for 20 minutes.

  2. Step 2

    Add apples and the oiled, seasoned pork; roast 18 minutes more.

  3. Step 3

    Warm cider, mustard and honey in a pan; reduce by half.

  4. Step 4

    Pour over the tray for the last 5 minutes. Serve with kale.
