Method

  1. Step 1

    Boil the peas 3 minutes; blitz with mint, creme fraiche and lemon. Keep warm.

  2. Step 2

    Dry the scallops thoroughly; season.

  3. Step 3

    Sear in the oil over fierce heat, 90 seconds a side; add butter and sage for the last minute.

  4. Step 4

    Plate puree, scallops, sage and the nutty butter. Bread for the rest.
