Method

  1. Step 1

    Roast the squash in the oil at 200C fan for 30 minutes; crisp the sage alongside for the last 5.

  2. Step 2

    Cook the pasta 2 minutes short; save a cup of water.

  3. Step 3

    Beat ricotta, nutmeg, zest, milk and half the Parmesan; loosen with pasta water.

  4. Step 4

    Fold pasta, squash and ricotta cream into a dish; Parmesan and sage on top.

  5. Step 5

    Bake at 200C fan for 15 minutes.
