Fry the aubergine in half the oil until golden; remove.
Soften onion, courgette and peppers in the rest, 10 minutes; add garlic.
Return aubergine with tomatoes and herbs; simmer 30 minutes.
Make wells; crack in the eggs, cover, 6 minutes.
Basil over everything; bread for the pan.
