Method

  1. Step 1

    Warm the beans with the whole garlic clove in their liquid; season.

  2. Step 2

    Chop herbs, capers and anchovy fine; whisk with mustard, vinegar and extra virgin oil.

  3. Step 3

    Sear the oiled tuna 1 to 2 minutes a side; rest and slice.

  4. Step 4

    Beans, rocket, tuna, salsa verde in that order.
